1. Prep the chicken:
Start by cutting the chicken wings into drumettes and flats if they aren’t already. Use a sharp chicken wing knife for a clean cut at the joint.
Pat the wings completely dry with paper towels — the drier they are, the crispier they get.
2. Season:
In a large bowl, toss the wings with baking powder, salt, garlic powder, paprika, black pepper, and oil. Make sure every piece is evenly coated. The baking powder helps draw out moisture and gives the wings that irresistible crunch.

In the Oven (classic method):
• Preheat oven to 425°F (220°C).
• Line a baking sheet with foil and place a wire rack on top.
• Arrange wings in a single layer.
• Bake for 40–45 minutes, flipping halfway through, until golden and crispy.
Air Fryer (fast & easy):
• Preheat air fryer to 400°F (200°C).
• Place wings in a single layer (work in batches if needed).
• Cook for 20–25 minutes, shaking or flipping halfway through.
