MUSHROOM SAUCE

This sauce is comfort in a pan — buttery mushrooms caramelized with onions and garlic, simmered in a creamy base that hugs every bite. Add a hint of thyme, a whisper of wine, and a touch of parmesan, and you’ve got a 5-star sauce in under 20 minutes.

INGREDIENTS:

Serves 2–4, depending how saucy you are

• 2 tablespoons butter

• 1 tablespoon olive oil

• 1 small onion, finely chopped

• 3 garlic cloves, minced

• 250g (about 2 heaping cups) mushrooms, thinly sliced

(cremini, button, or a mix of wild mushrooms)

• 1 teaspoon dried thyme (or 1 tbsp fresh)

• Salt and freshly cracked black pepper, to taste

• 1/2 cup chicken or vegetable stock

• 3/4 cup heavy cream (or cooking cream)

• Optional: 1/4 cup grated parmesan, splash of white wine, or a squeeze of lemon juice for balance
